Heh ... I was about to ask you for said recipe. Then I noticed this is what you do for a living, so I shall refrain.
My birthday is coming up, and I was asked what kind of cake I'd like. Carrot was the first thing that came to mind, but I nixxed it because 1). it's loaded with calories, 2). I'm the only one in the house that likes carrot cake, which means 3). I'd end up eating the whole thing myself. Hence why low-fat caught my eye.
Very lovely cake, though. I've tried putting chopped nuts on the side of a cake before, but it did not come out looking like that.
